A ground steel plancha plate is a carbon steel plate that has been polished in a grinding machine to achieve a very smooth and uniform surface. This finish allows the ground steel plate to evenly distribute heat and gives it a great ability to brown food.
When cooked with a ground steel plancha, the heat is evenly distributed over the entire surface. This creates a large, flat cooking surface, ideal for cooking multiple food at once. The plate is heated to a high temperature, usually between 250 and 300 degrees, to cook food quickly and evenly. The plate should be preheated to the proper temperature before placing food on the surface.

To maintain a ground steel plate, it must be cleaned regularly and protected with a thin layer of oil. Use a lid to protect the plate from any accidents and cover the plancha with a protective cover to protect it from rain.
The ground steel plancha size you choose will depend on your cooking needs. For a small family or a single person, a 60cm to 70cm plate should be enough. For large families or to cook a larger food amount at once (receptions), a 75 cm or even 90 cm planchas will be more appropriate.

The electric models (Extreme range) are perfectly suited for indoor use. The electric planchas performance is similar to that of our gas planchas: the same equivalent power and the same technical attributes.
To cook with a ground steel plancha, it's very simple: Preheat the plate until it reaches the desired temperature. Drizzle a splash of oil onto the plate. Then place the food on the plate and cook until done, turning if necessary.
The ground steel plate is grey in colour. During its manufacture and therefore when you receive it, it is protected by a blue film that must be removed before its first use. For the first use, wash the plate with soap and water. Then rinse the surface thoroughly and pat it dry with a towel. Apply a thin layer of oil and use a paper towel to spread it evenly. Finally, heat the plancha and start cooking.
To prevent food from sticking to the plancha plate, make sure it's well oiled and hot enough before placing the food in. Use a spatula or scraper to move food if necessary. Finally, be patient and let the food cook on one side before flipping it.
